Double Chocolate Cookies

Double Chocolate Cookie (Grain Free)

(Grain-Free/Gluten Free)

(Inspired by this recipe)

Makes 3 dozen
1 cup any seed/nut Butter (I used sunflower/tahini blend)
1/2 cup brown sugar (any granulated sweetener should do)
1 banana mashed
1/2 cup butter
1/2 cup coconut flakes (unsweetened) (optional)
1/2 cup of chocolate chips melted
1/4 cup of cocoa
2 eggs
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla
Turn oven on to 350 degrees.
Mix together, butters, sugar, vanilla and banana . 
In a separate bowl (I won't tell if you skip the separate bowl) beat eggs, melted chocolate and cocoa.
Combine with wooden spoon and flair :). Add chocolate chips and coconut, if using.
Take NOTE: Dough is soft. I think it is thicker than brownies but softer than traditional cookie batter. 
Spoon about a tablespoon of dough on to cookie sheet. 

These are filling cookies so I like to make them small so I can have more than one.
Bake 8-10 minutes or until edges begin to look dry and centers are set and glossy.
