Carmelized Bacon and Onion Quiche with Broccoli and Spinach (grain free)

This I threw together on a whim. It turned out AMAZING. So I share :).

Carmelized Bacon and Onion Quiche with Broccoli and Spinach (grain free)

1 pound bacon (local, pastured and responsibly raised I do no not recommend grocery store pork)
2 medium onions
1 pound mix of sweet potatoes and red potatoes ( about 3-4 small) shredded.

1/2 pound spinach (I used fresh baby spinach but any will work)
1/2 pound of frozen broccoli florets, diced small
10 eggs
2 cups milk (we used raw, slightly soured)
1 pound extra sharp cheddar cheese

1 teaspoon pepper
1/2 teaspoon peprika (optional)

So first, flick the oven to 350 degrees, then heat your skillet and get that bacon sizzling (I needed two pans to fit it all in). Eat those really nice end pieces that are mostly meat and very little fat. Yeah, that’s what I’m talking about – delicious.

While that browns for five minutes or so grab the onions
Chop onion in half then slice thin, so you have a bunch of c shaped onions.
Toss onions in with bacon and let them get rich and carmely as you continue to work.

Shred the potatoes- if you have a food processor with a cheese grater attachment, score! If you have to shred the potatoes by hand- I’m sorry. It will take an extra minute or two. 🙂

Bacon and onions should be looking tasty and golden. Move them to one pan to sizzle, leaving most of the grease behind. Doesn’t have to be perfect it’s all going to the same place.

Toss shredded potatoes into bacon grease. Yes, I just said that out loud.
Let soften for a couple minutes. Get out 9×13 pan and cheese.

Spread the potatoes in the pan bake in the oven 15 min.

Meanwhile, add vegetables to simmering bacon and onions. Cook lightly. If using fresh broccoli you may need to steam first.

While that bakes and veggies warm shred cheese and beat the eggs.
Take the pan out of the oven and add veggies and bacon, then eggs, and finally top with cheese. Ta- da!

Turn oven up to 400 degrees, bake 30- 45 min until top is golden.

Enjoy! This is great for breakfast lunch OR dinner.
