Chocolate Zucchini Cake (The Best)

My mother in law made the best desserts. Butter and sugar in large amounts and a healthy dose of chocolate. Delicious.

My beautiful mother in law went to be with Jesus two years ago. We are so thankful she is now whole and free from a failing body. We miss her very much.

This time of year my in-law’s garden would be teeming with bounty including the largest zucchinis ever. This dessert would surface as a sweet way to use the bounty.

While I am in the process of revamping the recipe to accommodate our current dietary needs I thought I would share the classic recipe:

Chocolate Zucchini Cake

Cream together
1 cup brown sugar
1/2 cup white sugar
1/2 cup butter
Add and stir well:
1/2 cup oil3 eggs
1 teapoon vanilla
Measure into sifter then sift into bowl
2 1/2 cups flour, sifted
1/2 teaspoon allspice
1/2 teaspoon cinnamon

1/2 teaspoon salt
2 teaspoons of baking soda
4 Tablespoons cocoa

Add to mixture, stir until blended 2 cups grated zucchini

Pour into greased, 9 X 13 pan.

Sprinkle 1 cup of chocolate chips over the top.

Bake at 325 degrees for 45 minutes
